o 1 bag GVF spinach
o ½ lb. cooked GVF bacon twists
o ¼ medium red onion, sliced
o 4-6 hardboiled eggs, sliced
o 1 small tomato, sliced
o Salt and pepper, to taste
o 1/4 cup EVOO
o 1/4 medium onion, finely grated
o 1/8 cup apple cider vinegar
o 1/8 cup ketchup
o 1/8 cup sugar (or sugar substitute)
o 1/8 tsp. salt
1. Roughly chop your cooked Bacon Twists, making sure to keep in large chunks.
2. Whisk together dressing ingredients. Rinse and drain spinach. Place both in the refrigerator to chill.
3. Season sliced hardboiled eggs and tomato with salt and pepper.
4. Top bed of spinach with fixins, drizzle with dressing, enjoy!
